DINER
If you're visiting Ocho Rios and want to enjoy the best of Jamaican
and Asian dishes, then this is the place to eat. This vibrant and
modern setting is conveniently located outside the Ruins but in
the centre of all of Ocho Rios' attractions. In addition to the
Diner, we feature a special take-out section for the adventurous
who wants to find their own special dining spot.
EXECUTIVE CHEF SAM SHUM
SAM
SHUM, born and educated in Hong Kong. After his secondary study,
he started his cooking career as a pot-washer in Hong Kong Hilton
Hotel at the age of eighteen (18). He moved onto the Furama Hotel,
Lee Garden Hotel and finally he was employed to the Ritz Carlton
Hotel in Montreal, Canada as Gande Manager & Grill Chef in 1992.
He started his own business in Toronto, Canada in 1994. The restaurant
of China Buffet King was under his management and supervision.
In 1997 he further extended the buffet restaurant to Atlanta, Georgia
USA. The first 600 seated restaurant with Chinese, Japanese and
International cuisine in that city. He was the Executive Chef and
Vice-President of the company.
In the new millennium, year 2000 he joined his brother Philip Shum
to open a brand new concept of restaurant in Black River, Jamaica
- The Riverside Dock Restaurant and Club. The new restaurant introduced
Japanese, Chinese, International and Jamaican cuisine with beautiful
scenery of the riverside of famous safari tour of Black River, Jamaica.
In the year of 2001 and 2002, he got two (2) gold, one (1) bronze
and several merits from Jamaica Cultural Development Centre Culinary
Competition in Jamaica. Among his awards the 'mango pudding' was
so welcomed that even some of his old guests from Atlanta called
long distance just to ask for the recipe.
